Ever since I started cooking, I always made chicken soup with chicken broth because for some silly reason I thought that was the only way to make chicken soup.

(Sad, I know)
Last week I went to Ralphs to buy some groceries and for some strange reason I was really craving chicken soup. I went over to the soupy slash brothy section and found my little box of chicken broth and it was so expensive! I felt so torn because I didn’t want to spend so much money on a box of flavored water.. I was slowly walking out of the grocery store with head sulked down when I passed by the warm Rotesserie Chicken section. How could I resist the smell? A rotesserie chicken is only a dollar or two dollars more than the box of chicken broth so I decided to try making the chicken soup out of ‘scratch’.
Grabbed a few vegetables:

I boiled water for about 10 minutes, threw in a whole onion cut in half with a pinch of salt.

then I just pulled apart the whole rotesserie chicken and threw in all the pieces (yea, almost 100% of the chicken including the bones!) into the crazy onion-boiling water. I chopped up my veggies, threw it in and let it boil for about 30 minutes. I threw in pinches of salt in-between flavor-tastings.
then voila~

8 servings of chicken soup :) I left the bones in there just for kicks and it actually made it alot more fun to eat! I left the vegetable pieces really big so it made for a chunky chunky soup! So healthy and so yum!
Perfect comfort food during a tiring week!
Good riddance over-priced, super-sodiumed 30 oz chicken broth.
